1/2CupAlmond or Soy Milk
1TablespoonApple Cider Vinegar or Lemon Juice
1Tablespoon Ground Flaxmeal
2TablespoonsWarm Water
1/3CupVegan Sugarwhite or coconut
2LargeRipe Bananas
1 3/4CupsUnbleached All Purpose FlourExtra for dusting the loaf pan.
1teaspoonBaking Powder
1teaspoonBaking Soda
1pinchSalt

1/3CupCanola, Coconut Oil, or Rapeseed OilExtra for greasing the loaf pan.
1Granny Smith Applepeeled and chopped into 1/2 inch pieces

Instructions
Preheat oven to 350 F (175 C)
Mix flaxmeal and warm water to create a flax egg. Let it sit until the mixture has gelled - 2-5 minutes.
Mix apple cider vinegar (or lemon juice) and milk. Let mixture sit for about 5 minutes until it's curdled.
Mix flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
Add bananas and sugar to a small bowl and mash to a paste.
Add wet ingredients to the flour mixture and combine. Fold in apples and walnuts until combined. Don't over mix.
Pour mixture into a greased, nonstick loaf pan and bake for approximately 50 minutes or until a toothpick inserted into center of the loaf comes out clean.
